Growing up Mom wanted only two things for Thanksgiving, mincemeat pie and pecan pie. There was always a discussion about it being pronounced Pee-khan not pee-can as the pee-can is what you keep under the bed.

*however, being married to an Englishman means I still have to make them for him.

Thanks for mentioning me. My strategy this year will be prayer, actually. I have two cranberry tarts, one apple pie and one pumpkin cheesecake to make before noon on Thursday and got back from work too late last night to start. Can we say Baking All-Nighter? I hope you have a lovely T-Day Elise!

Our pie strategy is to have a pie night extravaganza (it's tonight!), where we're inviting 50 friends over to eat pie at our house. Each family (there are 15 coming) will bring a pie to share, and we'll also be providing the wassail. Everyone can sample all the different types of pies they want, and everyone goes home happy. That way, we won't have to make lots of pies that we'll have to eat all by ourselves on Thanksgiving and the days following. It sure saves calories, if you are counting them! We're making a pecan-butterscotch chip pie to share. Mmm pie.

I'm making 4 pies for 9 people. 2 apple, 2 pumpkin because that's the way we roll at my house. And yes, apple pie is wonderful for breakfast and lunch and dinner.

I'm actually making mini pie-pudding things in ramekins. There are only 2 of us for the big day this year, and making a whole pie is just going to be too much. I am, however, making my "mini-pies" the same as my normal favorite Thanksgiving pie - layered rum-raisin cheesecake (bottom) with spiced pumpkin pie (top). I'll have to take some photos this year... Glad to see I am not the only wierdo making 2 pies for 5 people. I don't like pumkin (my husband doesn't really care for it either) and love pecan, but my husband won't eat it. So I am making apple and pecan because when I mentioned the possibility of not having pumkin in front of his parents and grandmother no one said anything.

Elise, thank you so much for posting the apple cranberry pie recipe! I made one years ago that was so delicious, but I lost the recipe. I was just planning to wing it tonight.
I'll take a slice of pie over a piece of cake any day. Apple is my hands-down favorite, but this year I'm making the apple cranberry pie and a pumpkin pie. I wasn't going to make a pumpkin pie, but a very sweet lady gave me a jar of canned pie pumpkin that looks so delicious I just have to use it. Her recipe does not turn out a smooth, custard-style pie but a nice, chunky, textured pie. I will attach the recipe. Happy Thanksgiving, everyone!!

Pumpkin Pie

2 cups mashed, cooked pumpkin or winter squash
3/4 cups packed brown sugar
2 Tbsp. molasses
1 1/4 tsp. cinnamon
3/4 tsp. salt
3/4 tsp. nutmeg
3/4 tsp. ginger
3 eggs, beaten
1 (12 oz.) can evaporated milk
9-inch pastry shell

In a bowl, combine the first 8 ingredients. Using a wire wisk, stir in the milk. Pour into pie shell and bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 50-55 minutes or until knife inserted near the center comes out clean. Cool. Serve with whipped cream.

My friend and guest is doing two pumpkin pies - one plain for the kiddies, and one with chipotle. I can't wait to try it!

I will be doing my Thanksgiving dessert tradition, steamed carrot pudding with rum sauce.

We will have 14 people for dinner, but 8 of them are little kids and about half those little kids will probably just want giant piles of whipped cream for dessert. Hey, it's a holiday. We try to make 'em happy.

I brought the Sour Cream Apple Pie with Streusel Topping to the Thanksgiving party that I attended last year. It was a big enough hit that I am bringing it again this year. Thanks for posting such great recipes.

I live alone- so one pie every week or so. What I don't eat gets pawned off on the unsuspecting.

Somehow, it looks like this year we will not have pie! I am making a pumpkin cheesecake for my pumpkin dessert and my husband, newly on oral antidiabetic drugs has asked me to replace his favorite pecan pie with a chocolate bundt cake with a lot less sugar! Your pix and recipes make me yearn for a mile high apple pie.... or maybe a cherry pie with vanilla ice cream.... or maybe...

I've never been sure if all the little ones really like pumpkin pie or just want the chance to squirt Ready Whip all over it (and straight in their mouth if the grownups aren't paying attention.)

I love pie! I grew up in a pie family (my husband is from a cake family) and Thanksgiving is my opportunity to revel in pies. My mom is the master pie baker and she will be bringing pies to the feast: huckleberry (picked by my parents in the forests near Mendocino), blackberry (from along their creek), apple (my grandma's recipe), pumpkin chiffon, key lime, and regular pumpkin spice. One year, she made 14 different pies for our feast. There were only 9 people at the dinner!!! We indulged in pie for days afterward. Yum...

I'm making Pecan Pie and an Apple Tart for our belated meal on Saturday. Pecan pie because it's my favorite! But since I am in Europe, some of my guests might not like such a sweet dessert - hence the more familiar (to them) apple tart. Normally I'd do an Apple Crisp. I'm making the pie dough a day ahead, and using puff pastry for the tart. Husband will be on apple peeling duty! hehehe.

I'm making three pies this year, even though we've only four for dinner. Two are for other families who put in 'special requests'! And then the next day I'm making six (I think) for a church bazaar on Saturday. Tell your dad we'll do Battle of the Pie someday! Happy Thanksgiving, Ms Elise ...

I had my big pie-baking fest yesterday afternoon. I ended up with 5 pumpkin pies. Didn't make a homemade crust this year - just wasn't into it. I gave two away to friends, so that leaves me with 3 pies for 10 adults, 2 kids and 4 toddlers. We'll probably get through most of it. I posted my "prized" recipe today - it's the only pumpkin pie I actually like. I'm more of a peach or blueberry pie girl. Happy Thanksgiving to all! Happy Feasting!

I started making my pies today before coming to read this blog. I made two standard pumpkin pies, homemade crusts, extra spices, and one apple/quince pie, an experiment. So we will have three pies for eight grownups and one four year old grandson. Now I'm wondering it this will be enough. I may have to try Elise's caramelized nut tarts. I am currently baking an apple pie and about to start making the crust for the pumpkin pie. We will be having 8 adults here...but we also have a just finished homemade cheesecake.

With much concentration, I prepared Suzanne's old fashioned pumpkin pie from scratch (including filling and recommended pie crust). The proof will be in the eating tonight but it smelled absolutely delicious and looks wonderful. Many thanks!

LOL, Elise, I now love your dad even more than I already did! Sadly we had no pie at all yesterday (a tragedy I know), so I had to settle for leftover rice with roasted onions and chicken drippings for breakfast. An odd but tasty choice, and not anywhere near as good as apple pie! : )
