I read that these mats, Silpat in particular, smoke, have a foul smell and set off smoke alarms. Is this true? What has your experience been?

I've been using Silpat for a couple years now and have never encountered a smell or smoke problem. One should after each use gently clean them with a soft sponge. I can imagine that if one didn't clean them, residue from a prior use might smoke. The only thing I would caution about is to make sure that you do not use a sharp knife on them, as it will likely cut through the surface.

I have had a bad experience with a cheap version purchaseed from a super store. My cookies had a foul plastic taste and the sheet wrinkled up after being in the oven. Needless to say the sheets proptly ended up in the trashcan. These might be the source of the rumor. I would hope if I splurged and purchased better quality that it would not have happened. I have not yet had a chance to purchase the real thing but will when I can.

Hi Elise - thank you for letting us know, I was thinking about getting silpat but they are quite expensive and I love matfer stuff... Have you used both of them, if so, which do you prefer?

I have owned one for about 2-3 years and the only problem I have had is that it is starting to stick but then again, I have cleaned it several times with a greenie/scratch pad.

I use both Silpat and Exopat mats extensively and find that both work equally well. I've used both to temperatures of up to 500°F without strange smells. I also use them for rolling out dough as well as baking and candy making.

I love these. I bake a notoriously difficult-to-remove gingersnap and they just slide off these Matfer sheets. Love them.

Side note - anyone notice how a cookie is strategically placed over the "France" in the "Made in" statement? Humorous. Wonder if that's just for the US market. :-)

I bought two Exopat mats from Amazon the last time that there was a shopping alert on this site. I've only used them once, to bake oven fries, and they turned out perfect. There was no odor or smoking, and the fries slid right off the mat with very little oil needed. In order to get the desired crispiness, I broiled them for a minute at the end of cooking.

I have two silpat baking mats (they just say made in France) and they smoked like mad the first time I used them. Fortunately I was pre-baking them in 400 F oven. The smoke alarm in our hallway went off. I didn't actually see the mats smoking, but there was a strange smell in the air and the house was definitely smokey.

I like these for some cookies, but definitely not all cookies. The spreading (particularly on the very edge) and crackle top can really be adversely affected for some recipes.
