Salmon Macaroni Salad Recipe

This salmon macaroni salad is a delicious variation of your standard tuna macaroni salad.

Salmon Macaroni Salad Recipe

Can be prepared in 15 minutes or less.

Ingredients

Cooked salmon – either fresh or from a can
Asparagus – chop off tough bottoms and discard
Macaroni – either wheat or wheat-free quinoa
Mayonnaise
Fresh rosemary
Lemon
Salt & Pepper

Method

Cook macaroni until al dente (slightly firm), drain. Steam asparagus 5 minutes, cut into 3/4-inch pieces. Mix all ingredients, season with rosemary, salt & pepper, lemon juice to taste. Chill. Serve on top of shredded iceberg lettuce to complete the salmon macaroni salad.

Hi, I was thinking of making this for my mom for her birthday. She LOVES salmon, but really dislikes rosemary. =/ Does the rosemary taste really come out, and if so, can it be omitted?

You can skip the rosemary. If you have some dill, that would be a good substitute, or even some chopped parsley. ~Elise

Hi, I would like to know whether there are any other vegetables that I can use to substitute with asparagus? Thanks!

You can leave them out, just add more chopped green onion for greens. Or you can add chopped fresh spring snow peas. ~Elise
