This is one of those great party brunch casseroles. It's easy to assemble the night before and just pop in the oven an hour before needed in the morning.
Blueberry Maple Breakfast Bake Recipe

Preparation time: 15 minutes to prepare, 1 hour to cook.
Ingredients
1 loaf of white bread
4 oz cream cheese
2 cups fresh or frozen blueberries, divided
8 eggs, beaten
1 1/2 cups milk
1/4 cup maple syrup
1/4 cup melted butter
Method
1 Preheat oven to 350 degrees F.
2 Remove crusts from bread; cut into one inch cubes. Cut cream cheese in small cubes (makes about 1 cup). Grease a 9x9x2 inch baking dish. Place half of the bread cubes in the dish. Scatter cream cheese cubes and 1 cup of blueberries over the bread. Top with remaining bread cubes and blueberries.
2 In a bowl, combine eggs, milk, maple syrup and butter. Carefully pour over bread mixture.
3 Bake until a knife inserted in the center comes out clean, about 1 hour, covering with aluminum foil if edges brown too much.
4 To serve, cut into squares. Accompany with additional maple syrup, if desired. Can be prepared the night before, and just baked before serving.
Yield: 9 portions.

This recipe was wonderful, although I had to make it in a 9x13 instead of 9" square, as there was too much to fit in the smaller pan. To make it a bit more diet-friendly, I even used egg beaters and a high-fiber, low cal bread, and everyone still loved it. Thank you for this great recipe!
